"headline": "The hospitality staffing problem is churn, not empty job ads. In Japan 27.8% of accommodation and food-service workers were new hires in 2025 against 14.7% across all industries, and 23.7% left in the same year. In the US the job-openings rate in leisure and hospitality fell from 5.9% in August 2025 to 4.7% in August 2026 — the same rate as retail trade, which rose to meet it. EU accommodation employers spend EUR 20.32 thousand per person employed per year.",

"title": "Why hospitality staffing numbers disagree, and what this page does not say",
"body": "Four perimeters are in play and they are routinely mixed up. First, the industry code: Eurostat I55 is accommodation only, Eurostat I is accommodation plus food service, US NAICS 72 is accommodation and food services, and US NAICS 70 (leisure and hospitality) is wider still because it adds arts, entertainment and recreation. A rate quoted for NAICS 70 is not a hotel rate. Second, the measure: a job-openings rate is openings divided by employment plus openings, while a Japanese diffusion index is the share of establishments reporting a shortage minus the share reporting a surplus — it has no denominator in workers and cannot be read as a vacancy percentage. Third, the respondent: Eurostat and BLS count establishments and payroll records, while the AHLA rows are 246 self-selected hotel owners answering a multiple-response question, so its shares do not sum to 100 and describe sentiment rather than counts. Fourth, cost basis: the Eurostat EU27 figure of EUR 20.32 thousand is what the employer pays in total per person per year, while the US $603.00 is what the worker receives in a week before tax — neither converts into the other. The data also contradicts the common narrative in two places worth sitting with. In Japan hospitality is less short-staffed than the average surveyed industry (74% of establishments against 81%, diffusion index 32 against 47) while its turnover is roughly double, so the bottleneck is retention rather than recruitment. In the US the hospitality job-openings rate fell to the level of retail trade over twelve months, which means the sector's hiring premium over other low-wage employers has gone. Finally, this page holds no occupation-level shortage data: it cannot tell you whether the gap is in kitchens, housekeeping or front desk, and it has no country-level vacancy rates for the EU.",

"methodology": "Every number on this page is a fact node in the God of Startups Atlas — a knowledge graph where each metric carries its source URL, reporting period, evidence tier and the verbatim quote it was taken from. Tier 1 means official statistics (Eurostat, US Bureau of Labor Statistics, Japan's Ministry of Health, Labour and Welfare); tier 2 means industry research with a disclosed sample. Values are shown in the unit and currency the source reports; nothing is converted or modelled. Two figures are arithmetic on two published values and are labelled as such in the row: the twelve-month change in US weekly earnings and the youth share of Dutch hospitality employment.",
